Delicious stuffed zucchini

Today I will show you how to make stuffed Zucchini that is healthy as well as light. It can be eaten as an appetizer or a snack. Enjoy.

Bake time:30-35 min

Ingredients:

  • 3 medium zucchini
  • 1/2 pound ground turkey or chicken or beef
  • 1 medium onion, chopped
  • 1 jalapeño pepper, seeded and finely chopped
  • 2 cloves garlic, chopped
  • salt and pepper to taste
  • 3 tablespoon olive oil
  • 1/2 cup cheddar cheese
  • 6 tablespoon tomato puree

Directions:

  1. Wash zucchini, and put it in a pot of cold water, bring to boil and cook until tender, about 10-15 minutes.
  2. Meanwhile, heat 2 tablespoons of olive oil in a skillet on medium high heat.
  3. Add ground meat and cook until brown, season with salt n pepper to taste. Drain and set aside to cool.
  4. In same skillet add remaining oil and saute garlic first, then add onions and jalapeño pepper. Reduce heat to low.
  5. When the zucchini have cooked through, remove from water, and allow to cool enough to handle.
  6. Slice cooled zucchini lengthwise, and scoop out center, leaving a little veggie flesh.
  7. Add the scooped out zucchini(chopped) in skillet with garlic and onion. Increase heat.
  8. Add ground meat and cook for a minute.
  9. Remove mixture from heat and set it aside.
  10. Fill zucchini with the mixture and top with tablespoon of tomato puree and cheese.
  11. Bake at 375 degree F for 25-30 minutes  or until light brown.
  12. Remove zucchini from oven and serve hot.
